Cremeux Chocolate

Ingredients:

Milk : 500 gr

Heavy Cream : 500 gr
Egg Yolk : 200 gr
Sugar : 100 gr
Chocolate 53% : 500 gr

Instructions:

We make the crème anglaise with the milk, the cream of milk, the yolks and the sugar. Once we have prepared the crème anglaise and while it is still hot, we emulsify it with the chocolate. We finish the emulsification with the beater and place the cream in the silicone molds.

We make the crème anglaise with the milk, the cream of milk, the yolks and the sugar. Once we have prepared the crème anglaise and while it is still hot, we emulsify it with the chocolate. We finish the emulsification with the beater and place the cream in the silicone molds.
